Cafe Rio Chicken


My brother Jason is one of the BEST cooks I know. On a recent visit to his house, he made us "Cafe Rio" salad--renamed to Rosario salad by my mother--but that's another story . . . Anyway, it is the BEST!!!! Here's his recipe! He grilled it, but he said that sometimes he just puts it in the crockpot--whatever you want!

Chicken Breasts
Kraft Zesty Italian Dressing (for basting)
Salt (to marinade)
Onion Powder (base)
Chili Powder (Onion powder to chili powder is 2:1)
Garlic Powder (Onion Powder to Garlic Powder is 3:1)
Cumin (Chili Powder to Cumin is 4:1)
Black Pepper to taste

Mix spices to taste. (In parentheses are the approximate ratios). Salt the chicken breasts to marinade and then rub the spices on. Grill on a grill, using the dressing to baste. (Or just put it in the crockpot with your chicken and some water and then shred and add some extra dressing to taste) Shred chicken before serving, or just serve the whole chicken breast. It's THAT good! YUMO!
