Summer Chicken Salad

2 cups cooked chicken, chopped
1 cup sliced celery
½ cup snipped dried apricots or golden raisins
1/3 cup sliverered almonds, toasted
¾ cup mayonnaise
2 Tbsp. Frozen orange juice concentrate, thawed
½ tsp. Garlic powder
¼ tsp. Ground black pepper
¼ tsp. Ground ginger

Mix ingredients together well and refrigerate. Serve on a bed of lettuce with tomato slices. Makes 4 servings.
