Instant Vanilla Pudding Mix

¾ cup sugar (or less)
½ cup Ultra Gel
2 Tbsp. Non-dairy creamer
Dash salt
½ tsp. Powdered butter vanilla
Yellow food coloring as desired (powdered)

Combine all ingredients in small plastic bag. Seal, label, date, and store in tightly covered container. For best results, use within 3 months. Yield: 1 packet.

Instant Vanilla Pudding: Add 1 packet Instant Vanilla Pudding Mix to 2 cups cold milk, stirring constantly with wire whisk. Pudding will reach maximum thickness in 5 minutes. Great for Pie Fillings too!

Chocolate Pudding: Add ¼ cup chocolate chips to thickened pudding. Microwave for 1 minute until chocolate is melted. Stir before serving.

Banana Cream: Add ½ tsp banana extract and 2 sliced bananas.

Coconut Cream: Add ½ tsp. Coconut extract and ½ cup shredded coconut.
