Fool-Proof Wheat Bread

1 Tbsp. Yeast dissolved in
¼ cup warm water
2 ½ cup hottest tap water
2 cup whole wheat flour
2 Tbsp. Vital wheat gluten
3Tbsp. Vegetable oil
3 Tbsp. Honey
3 Tbsp. Molasses
1 Tbsp. Salt
2-4 cups. Additional wheat flour

Dissolve yeast in ¼ cup warm water. Combine 2 ½ cup hot water, 2 cups flour, and gluten in large mixing bowl. Add oil, honey, molasses, and salt. Beat well with electric mixer. Stir in dissolved yeast and additional flour to make a soft dough. Knead well (8-10 minutes). Divide into two portions and shape each into a loaf. Place in greased loaf tins, lightly grease top of each loaf, and let rise until not quite double. Bake at 350° for 30-40 minutes until golden brown. Remove bread from pans immediately. Brush crust with shortening or butter and cover with a towel to cool. Yield: 2 Large loaves.
